Shopping tip: A food label may say “zero trans fat,” but the product may still have small amounts. Check the ingredients list before buying—if you see “partially hydrogenated oil” or “vegetable shortening” on the label, put the product back on the shelf. Also watch out for “palm kernel oil”—one of the few oils high in saturated fat.

Diabetes and eye problems are generally caused by high blood sugar levels over an extended period of time. Types of eye problems in a person with diabetes include glaucoma, cataracts, and retinopathy. Examples of symptoms include blurred vision, headaches, eye aches, pain, halos around lights, loss of vision, watering eyes. Treatment for eye problems in people with diabetes depend on the type of eye problem. An approach that has been popular with some people with type 1 diabetes mellitus since 2000 is known as DAFNE (Dose Adjustment for Normal Eating). This approach involves estimating the amount of carbohydrates in a meal and modifying the amount of insulin one injects accordingly. Instead of thinking about what you can’t have, focus on what you can eatmore of. Wholesome carbohydrates filled with satisfying fiber are foods you can eat with abandon. Those include leafy greens, tomatoes, carrots, celery, cucumber, zucchini, mushrooms, onions, garlic, beets, snap peas, 100% whole grains, beans, lentils, chickpeas and peas.
Before making any fiber recommendations, Dean has her patients tested for “pancreatic insufficiency.” She believes people with pancreatic insufficiency should be given digestive enzymes along with fiber, “otherwise the fiber will just bloat them up, and they’ll be quite unhappy,” she says. They contain vitamin E, unsaturated fats, fiber, plant sterols, omega-3 fatty acids, and L-arginine, which makes arteries less prone to blood clots. Nuts can also improve blood sugar control in people with type 2 diabetes.
Keep your blood pressure and cholesterol under control. Eating healthy foods and exercising regularly can go a long way toward controlling high blood pressure and cholesterol. Medication also may be needed.
A low-carbohydrate diet or low GI diet can be an effective dietary option for managing type 2 diabetes. These have been promoted as working by reducing spikes in blood sugar levels after eating. One downside of eating fish is some kinds may contain high levels of mercury, notably shark, swordfish, king mackerel, and tilefish.
